Nicholas completed his training at Claridge's Hotel, London 
one of the finest establishments in the UK

On arriving from London Nicholas worked as Executive Chef for
Blue Rock Catering, Sydney

Nicholas is a Bronze Medal Winner in the
National Finals Association Culinaire Francaise,
